Upgrade Dining is a nonprofit advisory initiative that partners with campus dining programs to improve student satisfaction and supply chain resilience. We set targets and implement strategies that focus on protein diversity, plant-rich options and culturally diverse meals.
Spearheaded by Food for Thought, Upgrade Dining works across 40+ campuses nationwide and currently reaches over 100,000 student diners through active university contracts in collaboration with dining teams, culinary teams, dietitians, administrators and specialists in university food service

UPGRADE
Our Mission
To equip institutions with the data, insights, and tools needed to maximize student engagement, diversify protein options and expand allergen-friendly meals while balancing cost, quality, and sustainability targets

An Upgrade Dining pilot can save a medium-size university up to $1 million in one year
The Cost-Saving Opportunity

Implementing stable egg alternatives can save a medium-size university up to $110,000 annually

Switching to whole food plant-based catering can save up to $650,000 annually
Our menu and procurement recommendations are benchmarked against the EAT-Lancet planetary health diet, a science-based institutional planning framework to align dining operations with climate, health, and cost-stability goals.
8 More Reasons to Make the Upgrade

Sustainability: Advances Scope 3 emissions reduction and helps institutions meet climate commitments through lower-impact procurement

Supply Chain Stability: Strengthens supply chain resilience by reducing exposure to price volatility and shortages linked to disease outbreaks (e.g. avian flu, salmonella)

Accessibility: Naturally accommodates diverse diners — free from 4 of the top 9 allergens and inclusive of religious, ethical, and cultural dietary needs

Operational Efficiency: Improves back-of-house efficiency with longer shelf life, reduced spoilage, and lower storage costs

Health: Aligns with leading public-health guidance on plant-forward eating patterns that support long-term health and reduce chronic disease risk

Food Safety: Reduces food-safety risks and simplifies HACCP compliance with recipes that require fewer high-risk ingredients and handling steps

Student Satisfaction: Delivers globally inspired, flavorful dishes that excite diners and meet evolving student preferences

Institutional Leadership: Bolsters institutional reputation by demonstrating leadership in sustainability, wellness, and accessibility across campus operations
